Fish & seafood / Pasta · Oven
Salmon, sweet roasted tomatoes and garlic-herb Boursin, folded through pasta with spinach, olives and lemon.
LET’S MAKE IT
Preheat the oven to 200°C. Add the tomatoes, red onion, garlic and olives to a lasagne dish with olive oil, black pepper and chilli flakes. Put the Boursin in the centre and arrange the salmon around it.
Bake for 20–25 minutes. Meanwhile, boil the pasta until al dente, reserving some pasta water before draining.
Remove the salmon from the dish. Stir the softened tomatoes, onion and Boursin together into a sauce. Add the spinach and some pasta water.
Flake the salmon back into the dish and toss with the pasta. Loosen with more pasta water as needed. Finish with the lemon juice, black pepper and herbs, with the optional extras if using.
